Mt. Fuji-Open for Business

The new Uptown Sushi spot is now open for business. It’s just south of 28th and Hennepin, a particularly convenient location for me. I managed to careen over with a few friends on its opening night to find some loiterers outside the door, waving the sidewalk through the entry. The staff was pleasant from the get-go and eager to introduce us to their particular brand of uptown hip.

In reality, Mt. Fuji seemed to hold true to pop Japanese, complete with Japanese reality TV on over the bar. The bar, seating, and lighting was all very elegant. The Chefs were preparing all the food behind a glass counter, out in the seating area, where patrons could see all the fresh ingredients going into their rolls and the exactness of the Chefs’ presentation.
There were a couple kinks yet to be worked out in the service, such as lack of individual dishes, and the tap beer that has yet to be installed. However, those few things I expect will be remedied in the first week of business. The sushi is very flavorful, if a bit mild on the spice. I would consider it one of the best places to be introduced to sushi, as well as the place to get very fresh tasting dishes. The heat in the wasabi came up short for some at the table.
Mt. Fuji gets a thumbs up on my end. The rolls and appetizers are great, and the prices during happy hour are really great (mon-thur 4:30-6:30pm & 9:30pm-close). Three dollar Saki and a bunch of rolls under five dollars? It’s definitely worth the cash.

Keys for me = 1) They have a ridiculously cheap happy hour. 2) They have plenty of space to spread out. 3) They don’t quite understand the spring roll concept.
